DWTS... My Opinion


Did you watch DWTS last night??

I just knew Mya was going to win!

In my opinion she is a much better dancer than Donny.

To bad they do not have a "most improved" award. That would have for sure gone to Kelly!

I have never been a fan of her but, now I like her! She has really grown up.. a lot!

Ha! and to see Aaron Carter Dance in his Kermit the Frog attire. To funny! He is a great dancer but, a bit cheesy in my opinion.

Anywho, Congrats to Donny, who already knew how to dance.

The Countdown Has Begun!



I love Mardi Gras!

When I first purchased my house it was brought to my attention that the parade is only a couple blocks from my house.

This meant we had to start a tradition.


Every year for the Centar Parade we have a party. Once the Parade gets close to the house we head up the road to catch beads.



Oh, I love this time of year!



So, the countdown has begun!

77 days until Krewe of Centaur Parade!!

77 days until the 4th Annual Mardi Gras Party at the house

Cabin Fever

Some of our friends got together and rented a cabin on Lake D'arbonne.
Bevin, Major and Stowie even came in!
We just stayed one day but, the trip was a great time!
Our Cabin was very cute!
The Hart's cooked Hotdogs for everyone.

Joey missed his Fiancee. She had prior plans but, was there in spirit.


The Martin's brought along their dogs.

Carie and I tried to stay warm by the fire! It was very cold!


The boys told stories and showed their man skills by building a fire.

Finally, Bevin, Major and Stowie arrived!

Carie and I get soooooo excited when we get to see Stowie!

Stowie kept trying to love and hold the puppies.
It was very funny!
At one point she took out her wipes and gave them a bath!
ha!
Then she took out the lighter...
This did not last for long.
:)

The next morning I went out and fished, trying to do better than I did the night before.
No luck!
We had breakfast, visited and then packed to head back home.
It was a great get away!
We will be back!
We all came to the conclusion that this is "our spot".

Chicken Enchiladas!



There other day I was reading Pioneer Women's Website/Blog.

I am sure most of you are followers of her site. If not, then you need to be!

Her site is full of great recipes, beautiful pictures and talks of ranching in a small town in Oklahoma. She also just relased a new cookbook!

After reading her blog for a while I think I am ready to purchase a farm and live off the land.

I could do it... maybe.



Anywho, PW posted this recipe for Chicken Enchiladas the other day.

I made them that same night and they were DELISH!

Best I have ever had!

Ingredients
2-½ cups Cooked, Shredded Chicken
2 cups Reserved Broth From Chicken
3 Tablespoons Canola Oil
12 whole Corn Tortillas
1 whole Large Onion, Diced
3 whole 4 Oz Cans Whole Green Chilies, Diced
1 whole Jalapeno, Seeded And Finely Diced
1 teaspoon Paprika
½ cups Heavy Cream
2 Tablespoons Butter
2 Tablespoons Flour
1 cup Sour Cream
2-½ cups Monterey Jack Cheese, Grated
Salt And Pepper (to Taste)
Picante Sauce (optional)
Cilantro, Chopped
Preparation Instructions
Heat 2 tablespoons canola oil in a small skillet over medium-high heat. Fry tortillas for no longer than 20 seconds, just to soften (do not allow to become crisp.) Place tortillas on a large towel or stack of paper towels to drain.

Heat 1 tablespoon canola oil in separate skillet over medium heat. Add onions and jalapenos and saute for 1 minute, just to start the cooking process. Add chicken, half of the green chilies, and 1/2 teaspoon paprika. Stir together. Add 1/2 cup chicken broth and stir. Add cream and stir, allowing mixture to bubble and get hot. Turn off heat and set aside.

In a separate large skillet, melt butter and sprinkle in flour. Whisk together and cook over medium heat for one minute. Pour in 1 1/2 cups chicken broth. Whisk together and cook for another minute or two. Stir in the other half of the chilies. Reduce heat, then stir in sour cream. Add 1 1/2 cups grated cheese and stir to melt. Add 1/2 teaspoon paprika. Check seasoning and add salt and pepper as needed.

To assemble, spoon chicken mixture on top of tortillas, one by one. Top with plenty of cheese and roll up. Place seam side down in a 9 x 13 casserole dish.

Pour cheese mixture all over the top of the tortillas. Top with extra cheese if you’d like, then bake at 350 degrees for 30 minutes. Sprinkle generously with chopped cilantro.





Last Weekend...Not This Weekend

On Friday we invited friends over to hang out on the patio.
It was a little chilly so we took advantage of the crisp air and made a fire.
We also roasted marshmallows!
It was a lot of fun!
Carie stayed warm by cuddling with Memphis.

On Saturday we celebrated Kate's Bday!
Every year she always has a great Theme.
This year, it was a Snuggie Birthday Party!

Please don't leave..

A couple weekends ago Eric went on a guys trip to the Nebraska/Baylor game.
As you can tell Mardi Gras did not want his daddy to leave.
(of course we put him on the suitecase)
Both Mardi and Memphis enjoyed being pulled around on the suitcase.

The number of Pecans in my backyard!

Mom and Time came over and picked up a BIG box of pecans. This picture does not even do justice! Hopefully they will come back and pick up more!
We now have approximately 372,785, 464 left
I guess there will be lots of Pecan pies to be eaten soon!
